Test Kitchen Tuesday: *Healthy* Fettuccine Alfredo
I have one word to describe this week’s TKT: Meh.
As it turns out, if you want Fettuccine Alfredo, you may as well splurge on the real deal, ‘cause this healthified version is just kinda blah. It’s not bad. It’s not great. It just is.
In other news, I made Teriyaki Chickpeas on Monday night and was informed that 2Chili not only really likes that meal, he thinks it is better than the chicken teriyaki I used to make. That’s saying something. If you haven’t tried those yet, I highly recommend it – they are fast, easy, and yum-yum!
Now that I have distracted you with something good, on to this week’s dinner. It seems the grey dreary skies have come back to the Northwest, so my photos did not come out well at all. I’m giving you the stock photo from Eating Well instead…

The Verdict: This wasn’t hard to make, per se, but it created a lot of dishes for something was just kind of so-so. We both agreed that it was kind of bland and needed something – we just don’t know what! (Maybe salt?) Overall it is light on calories for an Alfredo-type dish, but, you get something that is fairly light on taste.
