Test Kitchen Tuesday: Black Bean Quesadillas
I am probably the biggest example of “do as I say, not as I do.” Tuesdays are typically my crazy day, and today was no exception. Non-stop meetings resulted in not eating a real lunch, munching on a peanut butter oat bar in the car between meetings, caving to the animal crackers in the vending machine mid-afternoon, and coming home super hungry.
Thankfully, this week’s Test Kitchen Tuesday fell squarely in the fast and easy category, and less than 15 minutes after I hit the door we had dinner. Typically Mexican-inspired dishes go over well at our house, as 2Chili once told me he could live solely on Mexican food.
