Project: Food Budget–Week 10



I’m sorry to report that this is a very boring P:FB week!

I am flying solo in the Jet City, while 2Chili holds down the fort and entertains the pets in Bend. That means my grocery order was of the simplest proportions to just get me through the week. I was welcomed into town to see that we have a view again! That meant a lot of raking on Sunday afternoon. This was also the only day I have seen sun since I’ve been back.



Luckily, my penchant for freezing individual portions of leftovers has come in very handy, as I had just enough in the freezer to have dinner every night this week without having to cook! When we’re back together in a couple of weeks I will re-stock the freezer and be set again for my next solo venture. The freezer is your friend!

I ordered from Amazon Fresh for convenience sake, and for the first time ever, was highly disappointed. My fruit was pretty much all bruised up, the spinach was wilted, the kale was waterlogged, and the bananas were tiny and battered like they’d been in a cage fight. So, I am officially done with what used to be such a nice convenience in our lives!

I forgot to take a photo, but the order was mostly fruits and vegetables, with some pre-made hummus and some coconut milk thrown in for good measure.

Next week we’ll be back to normal, and I’m sure we’ll have plenty of stocking up to do as 2Chili will have pretty much used up all the groceries at his disposal while I was gone.



No meal plan this week – just lots of leftovers.

  • What a disappointment to hear about amazon. It’s not in our area anyway, but I wouldn’t mind getting a non produce order from them if prices were decent.

    Good luck with your stock up week next time, I had mine this week and I’m hoping I’ll be able to live off what I have for a week or so more without shopping.

  • i’m always impressed with people freeze leftovers. is there a trick to it? the hubster and i never seem to be appetized by it, and would prefer to just making something fresh…

    • That’s interesting Emily! Like you, there are only two of us, so leftovers the same week get old because it takes forever to use up some recipes.I have been freezing individual portions for a while now. They make great lunches and dinners for one.

      There is no real trick, I don’t think! I just leave a little room at the top of the container for expansion, label what’s in there with a date, and then put it in the fridge two days before I want it. Things that work well: Soup, pasta dishes, veggie broth, purees, doughs and breads, casseroles. Sometimes I add a little extra sauce to pasta dishes upon re-heating, but I do that anyway, even if they haven’t been frozen. Give it a try next time you have a large amount of something leftover…

    • I agree with Angela, freezing is great!

      I get sick of eating something too many days in a row, but if I freeze it, it gives it new life, so to speak.

      To add to Angela’s list, I like to also freeze meat. I can braise/slow cook a large portion of beef or pork (even chicken) and I stock it away in my freezer in smaller portions. Oh wait, you might be a vegetarian, so meat might not pertain to you. LOL

      To add one more thing, I use freezer bags. Most times I pack and place in the fridge first to make sure it cools way down for a few hours or overnight. Then I place the bags flat on a cookie sheet in the freezer until they are solid. The flat bags fit nicely in smaller spaces in my freezer.

    • Wanted to add pancakes to the list of freezer-friendly meals. – regular flour pancakes, as well as veggie pancakes, I suppose burgers would also freeze nicely too, although I haven’t tried it.

      • Oh, you are so right about pancakes and waffles. I freeze veggie patties no problem at all. In fact, those are the best for an easy, quick lunch!

        • I’m going to have to do it more often. It really does make it easy! And lunches are a terrific idea!
