Every now and then, you guys leave brilliant recipes in the comments of this blog, and I feel it’s my duty to bring them out of comment-land and turn them into a full post.
Today’s recipe is a great example of that fact. Reader Jennifer B. left a note on my Coconut Whipped Cream post about how to turn it into peanut butter mousse, and she was spot on.
On a side note, I don’t recommend making this with the Ninja Ultima – it really didn’t work that great for me. As I continue to use it, I have found that the Ultima is really great for things where there is enough volume and/or liquid to make sure it can mix it up, but it is not great for anything low-volume. Soon, I will write up an observations posts now that I have used the Ultima quite a bit. For most people, I still recommend the Ninja Mega KS over all other models due to its versatility. For people that only want green smoothies, the Ultima is the way to go. But, that is a topic for another day.
On to the mousse! This is not a low-calorie or low-fat recipe, but it is tasty!
Non-Dairy Peanut Butter Mousse
Serves: 5
- Ninja Pulse: 40 ounce jar with standard blade
- Ninja Professional Blender: 72 ounce jar with standard blade
- Ninja Kitchen System: 64 ounce food processing jar with metal blade
- Ninja Mega Kitchen System: 64 ounce food processing jar with metal blade
- Ninja Ultima: Not recommended; But if you do, use 72 ounce jar with quad blade
Ingredients:
- 1 can full fat coconut cream, chilled
- 1/4 cup peanut butter (make your own!), or nut butter of choice
- Up to 2 tablespoons preferred sweetener
Method:
- Place the coconut cream in refrigerator at least overnight. Additionally, put your Ninja Blender jar and blade in the refrigerator as well.
- When the coconut cream and jar are sufficiently cold, remove, and prepare your supplies: Blender, coconut cream, can opener, spoon, peanut butter, sweetener, and bowl
- Turn the can upside down and open. You want to turn it upside down because the cream and water in the can will separate, with the cream rising to the top. .
- Pour the water out of the can.
- Scoop the cream out of the can into your blender jar. The cream should be very stiff – not runny.
- Blend on “2” (or hold down the lid in the Pulse or steady state blend for models that don’t have speed settings) for about 30 seconds, until the cream has become fully whipped.
- At this point, add peanut butter and sweetener (if using), and blend for about 20 seconds to combine. Taste, and repeat until you get a ratio you like.
