I have been on a smoothie for breakfast kick for a few weeks – ever since I started the Be Well cleanse I have raved about. I really like starting my day with a smoothie, and have been playing around with new flavor combinations. This is one of my recent faves. I of course use the Ninja Pulse single serve cup for this, and then take the cup to work to wash it (still no kitchen…and no kitchen sink!)
This is an inflammation fighter if there ever was one. Blueberries are great antioxidants, avocado is a super fruit, packed with the antioxidant glutathione, lots of lutein (good for eye health), and vitamin E, and coconut water is a natural replenisher of spent electrolytes.
This smoothie is thick and creamy, and quite delicious. You won’t know the avocado is in there, trust me, but it is the key ingredient that makes it so creamy! I would be willing to bet you could serve this to a finicky child, as long as they like blueberries, and they would have no idea it wasn’t a milkshake!

Method:
Add all ingredients except water to blender and blend until smooth. Add a little water to thin, if needed. I use my Ninja Pulse single-serve cup to make a to-go treat!

Could spinach or other green be used instead of the greens powder?
Yes, absolutely. 2 handfuls of your favorite greens would work. I would reduce the liquid to 3/4 of a cup and add 3-4 ice cubes to help break up the greens that you add. Hope that helps!
curious about the protein powder – seems like those would have potential estrogen issues – also, why so much sugar? thyroid is pushing my triglycerides up, so sugar seems a no-no – is this from the blueberries or the powder? thanks!

The sugar is from the blueberries and coconut water. Coco water has quite a bit of sugar. The vega powder is really low in sugar (about 2 g).
