Project: Food Budget – Week 16



As I write this post I’m looking out my window at a true winter wonderland. I just love snow, until I have to shovel a foot off it off the driveway, which I did this morning! On a positive note, if you pay attention and swap sides often, shoveling snow is a great ab workout! It has been snowing heavily for a couple days in Bend, so much so that I had to get out the snowshoes and stomp down the backyard for our dog because she was face-high in snow! (She is about 45 lbs, so not a “small” dog). Sadly the snow is giving way to rain, creating a mushy mess, but, it  was fun while it lasted!

We had a pretty easy food budget week after last week’s big stock up. All of the produce is organic except the butternut squash and cauliflower, something I am always happy about. I like to show that you can eat well on a moderate budget and still have a wide variety of mostly seasonal fruits and veggies.

With two weeks left in the month, I might be cutting it close for January – we’ll see!

  • Veggie Scrambles with Eggs – Kale, tomatoes, mushrooms, black olives, beans, rice, eggs – so much food and so good!

  • That’s a great haul of food, Angela. and yum, more almond butter. I put that off my list until next month, when I have a bigger $ budget amount.

      • No worries at all! I have had that problem with Blogger blogs in the past, but I was able to comment on Valerie’s this morning – try using the Name/URL option – that seems to work most reliably.

    Can we also please discuss for a moment the sheer awesomeness of the fact that you had to snowshoe the backyard?! That had to be a lot of fun.

    Also, I get the feeling that you are going to be under budget as usual.

    • D’oh! Sorry! I copied the list from your blog last night when I was scheduling the post. ?

      Luckily, our backyard in Bend is about the size of a postage stamp, so it wasn’t that big of an adventure. In Seattle, on the other hand, I would have needed a snowshoe crew! As I get older I am learning smaller yards are just so much better!

      I am not so sure on this month’s budget – with two weekends left in January it’s going to be close!

  • We used to have breakfast for dinner every Sunday but have kind of gotten away from it lately. There’s nothing wrong with waffles for dinner!

  • We often do pancakes for dinner, but with no waffle iron, we haven’t attempted those. My husband is the breakfast maker — he makes the best eggs and pancakes.

    Since making the switch to largely organic produce and what comes from my CSA, I truly think the vegetarian meals I make taste so much better. Even just a tossed salad, with maybe some locally produced farmer cheese and apples, is so much more flavorful when it’s organic and local.
    the difference still floors me. And I’ve been doing this for about 3 years now!
