Project: Food Budget–Week 24



There is not a lot to say this week, so I’ll keep it brief. Since we are moving, I didn’t do a big stock up – only bought 2Chili’s milk and a bunch of bananas for a total of $5.02. As of last Thursday, we still weren’t sure that we were moving – it has been a rollercoaster of epic proportions – but by the weekend we were confident things were going through, so I didn’t stock up (thankfully).

We have been eating some bizarre combinations to use up the perishables and freezer items. I’ll tell you, I have officially learned that pretty much any combination of veggies makes a decent stir fry, even frozen corn and peas! My favorite has been a generous amount of kale, a parsnip, some corn, black beans, and a sweet potato. Weird, right? It is good.

As of today, the house is entirely packed, so, we’ll have to eat out for lunch and dinner today and tomorrow. But then, oh, but then…I am so excited to get back to Bend and get back to a “normal” routine! I have not been able to keep up with my training plan for my half Ironman for the last few weeks while we’ve been in Seattle, so I am ready to get back in the kitchen and back on the swim/bike/run routine.

    congrats on the sale, and the pending move. i am sure it will feel amazing to have one home, one kitchen, and one place to rest your head. good luck with everything!

    • Thanks! You summarized it well – it will be great to have only one home! Plus, have I mentioned I am OVER rain? HA!

  • oh no, you must have been holding your breath waiting to find out if the sale was truly going through. eeek. I know when we sold our last home, and was purchasing a new home at the same time, it was so scary to think that the old house sale could fall through. I was petrified until all papers were signed!

    Good luck and keep us posted. oh and I love your coconut peanut butter on ice cream idea. Who would have thought it would harden up! yum.

    • It is very un-nerving isn’t it?! We have been lucky with all the homes and land we’ve sold before (that makes us sound like land barrons! ha!), but this one has been a total roller coaster. There have been more bumps in the road in the last few days, but by this Friday, everything should be done. Whew!

      The coconut peanut butter on ice cream is just so good. Luckily I am out of both right now!

  • Fingers crossed it all goes well! Then you can just breath…haha, but then again, you might just get started on a new project and start all over again. LOL.

    Oh and last week at TJ’s I finally got my almond butter. LOL. I splurged!
