I don’t have a typical Test Kitchen Tuesday for you this week, but I have something good! We had a dinner guest last night and rather than try something brand new, I went with something tried and true, so today I have a breakfast recipe instead.
A couple of weeks ago, Caroline posted about the importance of breakfast (and breakfast with real foods), and had an idea I had never heard of for simple pancakes. I added two things to it, and, had to share what have to be the easiest pancakes ever. This makes enough for one person, so scale it if you are serving more than just yourself.
Are you ready?
Okay, it goes like this:
- 1 mashed banana
- 2 eggs
- 1/4 cup oats
- Top with fresh fruit
This is super easy, fast, and doesn’t make a huge pile of dishes. To top it off, it’s really quite good. Try it!
I used 1/2 cup of fresh blueberries just heated in the microwave for 90 seconds to get a nice fruit compote.
