Test Kitchen Tuesday: Gnocchi with Zucchini Ribbons & Parsley Brown Butter



This week, I was a little crunched for time, so I looked for a recipe that would be fairly quick to prepare. I went out on a limb a bit and picked out gnocchi recipe, even though I knew I would get serious push back from 2Chili. And, as expected, we had a conversation that went like this:

2Chili: “What’s for dinner?”

Me: “A gnocchi and zucchini with browned butter sauce.”

2Chili: “I saw that in the fridge. I don’t like gnocchi!”

Sometimes, I push the limits because I know he will like something that he doesn’t think he likes! I am such a rebel.

Don’t let the word butter scare you away from this one. It doesn’t have that much butter, and, the little bit goes a long way. I actually used Earth Balance, and it worked out just fine. You can make the zucchini ribbons with a potato/vegetable peeler. The zucchini in ribbon form seems so elegant compared to just chopped zukes.

Turns out he does like gnocchi. He thought this was very good and I feel vindicated. I started TKT to expose 2Chili to things he never thought he’d like, and, this one was a huge win.

The Cook’s Taster Rating: 

I thought this was really excellent – the kind of dish you could serve to company and they’d think you really put a lot of effort into it, but it really only took 20 minutes. I didn’t add the salt  because packaged gnocchi has a lot of sodium, and used Earth Balance instead of butter, but otherwise I made it exactly as described.

The Verdict: I will make this again, no question about it! I wouldn’t change a thing. Easy, fast, and delicious!
