I usually drain them and put butter in the hot pot to melt, then add my potatoes. If they are really dry I will add a little milk. My potatoes are more smashed than mashed I guess!!

Probably a good idea! Also, in thinking about this overnight, Chandana has a great point about how cooked potatoes can get watery after being refrigerated or frozen. I think the best approach here would be boil the potatoes today, then, process everything tomorrow — that way you won’t have too much milk from pre-adding it… Just a thought.

I reheated some tonight for dinner, and you’re right, they were slightly watery and needed a little thickener. I will update the post with how to do this, but I would use arrowroot powder dissolved in a little bit of water or some coconut flour to thicken them back up.

Love the use of Avacado .. I like mashed potatoes but keep away from them cause i my mind without loads of butter they would not be good. i need to try this one out!

With regards to freezing mashed potatoes, when you defreeze them do they not turn watery .. like regular boiled potatoes tend to?

You know, I am not sure. If you make it a day ahead, I would say to make sure that you put it in a bowl that plastic wrap will cling to, and then put plastic wrap very tightly over the top of the bowl to prevent air from getting in. You could also do all the steps except adding the avocado, and then add that in the day of – so everything is ready to go except the final mixing step, which is probably what I would do…
