Outside the {Lunch} Box: Hummus Sandwich

Until this year, I’d never really thought to have a hummus sandwich. I tried one at a To-Go’s sandwich shop, and it was really good. But, I can’t calorically justify eating at To-Go’s much, and they drive me crazy by using the same knife (without cleaning) for each person’s sandwich. I don’t want the guy-before-me-in-line’s extra mayo or whatever it may be on my sandwich. Yuck!

The great news is making a hummus sandwich is not exactly rocket science. This is fast and easy (even 2Chili can do this!), and you can put as much or as little work into it as you want. If you have lots of time and want to get creative, make your own bread and hummus. Or, if you’re more in a hurry, use your favorite bread and store-bought hummus.

This week, I have absolutely zero free time, so it was wheat bread from a store and Trader Joe’s hummus. The crunch veggies really make this sandwich, so don’t skimp – go with what you like but be sure to add something crunchy or you’ll just have a mush sandwich. No one likes a mush sandwich.

I forgot to bring my camera to Bend for our little week-long getaway, so you are getting an un-modified cellphone photo. Many apologies!

Hummus Sandwich

Ingredients:

  • 2 slices your favorite bread
  • 1/4 cup your favorite hummus
  • 1/2 a bell pepper, sliced
  • Handful of spinach
  • A few cherry tomatoes, sliced in half
  • A few slices of cucumber

Method:

Add all ingredients to your bread and enjoy. Try not to make another one immediately after you finish the first one!

    ooh nice idea to add bell peppers! I love hummus and tomato sandwiches too. I really need to start making it homemade!

      You and me both, Debbie! Of course, I am not making anything homemade right now, but homemade hummus is awesome! If your peppers in your garden produce well, they will be great for sandwiches! :)

    Anyway, I just made hummus the other day using the not-so-great peanut butter I recently made. LOL. That’s another story, but I’m not giving up on it. LOL.

    but I did have some extra lettuce and peppers from my salad and it was awesome on my hummus open-faced toast.

    No reply I’m afraid, and I just tried to subscribe to the kitchen post, and when I clicked the link, the message said “Your subscription could not be activated, it may have expired”

    How strange.

    Maybe you should try subscribing to one older post with an external email to see if it works for you. maybe something is broken. If you get them okay, then it must be me.

    I’m trying one last time, using my gmail address to see if that works.

    oh and yes, PB to replace the tahini. Not a big tahini fan. I bought it once, it tasted strange to me, and it was left in the fridge to spoil and be tossed out. :(
