Coconut Belgian Waffles

I am a sucker for waffles. And pancakes. But, waffles are probably my favorite breakfast food. There is a place in Tahoe City, California that makes amazing Belgian Waffles, and I make 2Chili take me there every time we are in town!

But, the “health rub” with waffles is that they are usually full of salt, fat, and refined, processed  sugars and flour. It’s kind of hard to make waffles work without fat – they won’t release from the waffle iron if you don’t get the balance right. But, they don’t need the refined sugars or flour.

Over the weekend, I created a waffle that comes together in a breeze and is full of good-for-you ingredients. Coconut oil provides a healthy fat, and paired with coconut milk beverage, you get a nice coconut flavor as well. These are pretty light and fluffy – not at all dense, and light on calories too!

Guiltless Coconut Waffles

Makes 3 Belgian Waffles

Time Required: 5 minutes to mix, 10 minutes to cook

Ingredients:

    • 1 and 1/4  cup rolled oats, blended into oat flour
    • 1/2 cup whey protein powder (I used a vanilla flavored powder – just Target’s generic brand)
    • 1 and 1/3 cups coconut milk beverage (like So Delicious brand – this is different from canned coconut milk)
    • 1 tablespoon coconut oil
    • 1 teaspoon baking powder
    • 1 tablespoon honey
    • 1 egg, separated

Method

  • Blend oats into a fine flour in a blender. If using Ninja Blender, use level 2 for about 30 seconds

  • Add all remaining ingredients, except egg and blend just until combined
  • Separate egg, and add yolk to the mixture, saving the white into a small bowl or cup
  • Blend for about 5 seconds to combine
  • Add egg white to the mixture and pulse three times to combine – do not over mix!
  • Pour into a pre-heated waffle iron in the portions recommended by the manufacturer – for my Belgian waffle maker, it is one-cup increments
  • Be careful not to burn – waffles are usually done when the major amounts of steam stop rolling out

Top with your favorite fruit, honey, or pure maple syrup. I used fresh blueberries heated in the microwave for 2 minutes to make a compote. Some shredded coconut on top would also be good!
